Three ways of doing are:

For DataTables >=1.10, use:
	$('table').dataTable({searching: false, paging: false, info: false});

For DataTables <1.10, use:
	$('table').dataTable({bFilter: false, bInfo: false});

or using pure CSS:
	.dataTables_filter, .dataTables_info { display: none; }
